What is your technique? Do you use any rub on it? Sear both sides and then let it cook slowly?
I usually get good results with spreading olive oil over the steak and rubbing some sea salt over it about 10 minutes before I throw them on. I sear them, then I turn the heat to medium and let them cook to 170 (I'm not into the bloody stuff
).
Yes... I use gas, which to some folks is almost sacrelige to cook good steaks on.
